3 cups of medium beets, cut in 1/2 inch cubes
1 1/2 tsp. olive oil
Himalayan salt to taste
Herbal seasoning to taste
1 tbsp. finely chopped fresh parsley
1 tbsp. fresh lemon juice
Preheat over to 400 F.
Combine beets with oil & salt, & seasoning blend in a medium bowl; mix well.
Arrange beets in a single layer on a baking sheet.
Bake for 45 minutes or until tender.
Remove from oven.
Cool for 30 minutes.
Combine beets with parsley & lemon juice in a medium bowl; toss gently to blend.
Serve warm or chilled.
