Mediterranean Roasted Beets


{1 serving}


Ingredients

  • 3 cups of medium beets, cut in 1/2 inch cubes

  • 1 1/2 tsp. olive oil 

  • Himalayan salt to taste

  • Herbal seasoning to taste

  • 1 tbsp. finely chopped fresh parsley

  • 1 tbsp. fresh lemon juice

Instructions

  • Preheat over to 400 F.

  • Combine beets with oil & salt, & seasoning blend in a medium bowl; mix well. 

  • Arrange beets in a single layer on a baking sheet.

  • Bake for 45 minutes or until tender.

  • Remove from oven.

  • Cool for 30 minutes.

  • Combine beets with parsley & lemon juice in a medium bowl; toss gently to blend.

  • Serve warm or chilled.
