Harissa Shredded Chicken Recipe


I have been asked a gazillion million times for my go-to shredded chicken recipe so here ya go friends! Make sure you save it because it will definitely become a fav - I make it almost every week for meal prep and even better, my kids love it too.

HARISSA SHREDDED CHICKEN RECIPE:

Ingredients:

3 lbs. of chicken breasts

2 Tbsp of olive or grapeseed oil

Harissa spice blend

2 cups of chopped onions

2 cups of red and yellow peppers

1 jalapeño diced (with seeds for extra spiciness or leave out)

Chicken bouillon

Salt/pepper

Directions:

In a large pot on the stovetop, heat up 2 Tbsp oil. add the chicken and cover with 2 Tbsp of Harissa spice blend. let simmer for 30-60 seconds, spreading it around in the pan. sear chicken breasts in spice and oil mixture on each side. put in onions, peppers, jalapeños, salt, pepper, 2 large tbsp of organic chicken bouillon and fill with water until chicken is covered. put the lid on and let it simmer for 2 hours, then just shred with a fork
