Healthy Chicken Salad

You know I love me some easy meal prep recipes!!! And this Healthy Chicken Salad recipe is kind of perfect for prep and kid-friendly too :)

Per your vote on my Instagram stories - this is the recipe you wanted:) It’s super simple and yummy.

Ingredients:

  • 3 lbs cooked chicken breast diced (chicken can be boiled or pressure cooked, or use a pre-cooked rotisserie chicken)

  • 6 stalks of celery

  • 3 green onions

  • 6 tbsp red onion

  • 2 green apples diced (or use red or green grapes if you prefer)

  • 1c slivered almonds

  • 4 tbsp fresh dill

  • 2c plain greek yogurt

  • 4 tsp honey

  • 2 tbsp almond milk

  • 2 tsp pink salt (+ more to taste)

  • ½ tsp black pepper (+ more to taste)

Directions:

Whisk the greek yogurt, honey, milk, salt and pepper together in a bowl for dressing. Pour over your other ingredients and combine in a large bowl. Let sit in fridge for an hour before you eat.
