Sweet Potato Quiche


ya better save this one because it is so dang good and share it with a friend too!


I made it this week for meal prep and will also be making it this weekend for Father’s Day with my Blueberry Bake below!


NGREDIENTS:

  • 15 Eggs

  • 4 Medium sweet potatoes

  • Whipping cream

  • Sun-dried tomatoes

  • Goat cheese

  • Spinach

  • Butter

  • Olive oil

  • Salt

  • Pepper

  • Garlic Salt

  • Pie Crust {I use the premade crust}


INSTRUCTIONS:

Preheat oven to 400°F to bake sweet potatoes until soft or use the instapot to cook. Then change oven to 375°F for the quiche. Scoop out the inside of the sweet potatoes into a bowl with 3 tbsp of butter and a drizzle of olive oil. Add salt and pepper and garlic salt and mix.


Let pie crust sit out for 5 minutes. Make sure to spray the dish with nonstick. Then place the crust in pie dish and layer the mashed sweet potatoes on top of the crust. Then add a layer of chopped spinach.


Whisk 15 eggs and 1/2 cup whipping cream together with salt, pepper, and garlic salt. Pour into pie dish.


Top with sundried tomatoes and goat cheese.


Bake at 375°F for about 30-35 minutes or until the top is golden brown. You may want to cover it with foil for the last 10 minutes if the top starts getting too browned.
