Foodie Friday - Chicken, Apple, and Sweet Potato Salad

Total Time: 2 hrs. 52 min. Prep Time: 15 min. Cooking Time: 37 min. Yield: 6 servings
6 Tbsp. balsamic vinegar 1 Tbsp. stoneground mustard 1 tsp. raw honey 6½ tsp. olive oil, divided use 8 oz. raw chicken breast, boneless, skinless, sliced 1 medium sweet potato, peeled, sliced 1 medium apple, peeled, cored, sliced ½ tsp. ground cinnamon Nonstick cooking spray 1 head green leaf lettuce, torn or chopped 2 Tbsp. crumbled feta cheese 2 Tbsp. raw pecan pieces, toasted

1. Preheat oven to 425° F.

2. Combine vinegar, mustard, and honey in a medium bowl; whisk to blend.

3. Slowly add 6 tsp.
oil, whisking continuously until blended.

4. Place one third vinegar mixture in resealable bag. Add chicken; mix well. Marinate, refrigerated, for at least 2 hours. Set aside remaining vinegar mixture for salad dressing.

5. While chicken is marinating, combine sweet potato, apple, cinnamon, and remaining ½ tsp.
oil in a medium bowl; toss to blend. Place on baking sheet lightly coated with spray. Bake for 10 minutes, turn, bake an additional 10 to 15 minutes, or until tender. Set aside to cool.

6. Remove chicken from marinade; discard used marinade.

7. Place chicken on baking sheet lightly coated with spray. Bake for 8 to 12 minutes, or until cooked through. Set aside to cool.

8. Combine lettuce, sweet potato mixture, chicken, cheese, and pecans; toss gently to blend. 9. Drizzle with remaining dressing; toss gently to blend.

10. Divide evenly between six serving plates.

I'm getting so EXCITED about my New Coach Mentorship Group that starts next week!

A fire was lit inside of me a few weeks ago at Summit about our team & where we have been called to be. We have been a team for 10 months now and we are #114 out of 300k...kind of remarkable!

For the first time in my life, I know that I am living out MY CALLING, MY PURPOSE. I am exactly where God wants me to be...leading and helping other women live up to their full potential.

I am looking for 5 women that are ready to CHANGE their lives for FOREVER! Women who are ready to COMMIT and go ALL IN with our team.  I want you to experience the JOY, passion, FREEDOM, and hope that I have discovered since becoming a Coach.

It is my mission to give HOPE & INSPIRE others to say YES & BE BOLD to changing their life as well their family's & their community. It is such a BLESSING to be able to welcome new women onto our team & be apart of their incredible transformation as a LEADER on the inside-out!

Foodie Friday - Chicken Satay with Peanut Sauce


Coconut milk, honey, and a touch of spice make this Thai appetizer a delicious snack or light lunch.
Total Time: 2 hrs. 21 min.
Prep Time: 15 min.
Cooking Time: 6 min.
Yield: 8 servings, 2 skewers and 2 Tbsp. dipping sauce
Ingredients for Chicken Satay:
3 shallots, finely chopped
6 cloves garlic, finely chopped
½ cup canned lite coconut milk
2 Tbsp. fresh lime juice
1 Tbsp. raw honey
3 fresh cilantro sprigs, chopped
¼ tsp. ground cumin
¼ tsp. ground turmeric
2 lbs. raw chicken breast, boneless, skinless, cut into 2-inch chunks
Ingredients for Peanut Dipping Sauce:
2-3 Tbsp. hot water
½ cup chunky peanut butter
3 Tbsp. fresh lime juice
1 Tbsp. raw honey
2 Tbsp. reduced-sodium soy sauce
½ tsp. chili sauce
Preparation for Chicken Satay:
1. Soak 16 wooden skewers in water.
2. Place shallots, garlic, coconut milk, lime juice, honey, cilantro, cumin, and turmeric in blender; cover. Blend until smooth.
3. Place chicken in a glass dish. Top with marinade; mix well to blend. Marinate, covered, in refrigerator for 2 hours.
4. Preheat grill or broiler on high.
5. Place 2 to 3 pieces of chicken on each skewer.
6. Grill or broil skewers for 5 to 6 minutes, turning every 2 minutes, or until chicken is no longer pink in the middle, and juices run clear.
Preparation for Peanut Dipping Sauce:
1. Place water, peanut butter, lime juice, honey, soy sauce, and chili sauce in a small bowl; whisk to blend.
2. Serve 2 skewers with 2 Tbsp. dipping sauce.

My Review & Results from the 3 Day Refresh

This past week I completed the 3 Day Refresh & I absolutely loved my results...especially since I put on a little "fluff" from vacation and the 4th of July!
The 3 Day Refresh is for anyone looking to lose a few pounds fast and/or to look and feel better in just 3 days. This program is for anyone that wants to kickstart their nutrition, break bad eating habits, get ready for a big event and look their best, or for just a routine “refresh” of their body.  I know for me personally, I like doing the refresh after I have had a recent food binge from vacation or a holiday! After completeing the refresh you will lost weight, decrease belly bloat, feel lighter, improve digestion, feel healthier, curb cravings, and increase energy. 
The meal plans consists of 3 vegan shakes a day, a fiber drink, lots of water, fresh fruit, veggies, and healthy fats so that you can maintain your energy while stripping out all animal by-products and processed foods.
Day 1: Lots of energy & belly bloat started to decrease. No workout on day 1.
Day 2: STARVING!!! All I wanted to do was eat eggs or protein...I did not workout on day 1, but I did on day 2 and all I could think about was food. I had lots of energy, abs became more defined, & lost 2lbs/2in.

Day 3: Feeling AWESOME! My waist & my body appeared more defined and less "fluffy". Did not workout on day 3. Lost 4lbs/4in.
Day 0 aka Day 4 - REFRESH COMPLETE - Feeling wonderful. Belly bloat has decreased tremendously, visible definition in my abs, lots of energy, and lost a total of 5lbs/4.5in.
 I would recommend the 3 Day Refresh to anyone that is looking to get their health back, gain more energy, and or lose some extra unwanted weight!
