Foodie Friday - Peanut Chicken with Soba Noodles

Peanut Chicken with Soba Noodles
Total Time: 32 min.
Prep Time: 20 min.
Cooking Time: 12 min.
Yield: 4 servings
½ cup low-sodium organic chicken broth
1 Tbsp. all-natural peanut butter
1 Tbsp. reduced-sodium soy sauce
1 Tbsp. raw honey
2 cloves garlic, finely chopped
1 thin slice fresh ginger, peeled, finely chopped
1 tsp. coconut oil
12 oz. raw chicken breast, boneless, skinless, cut into 2-inch pieces
½ medium onion, thinly sliced
2 cups fresh spinach (or chopped baby bok choy)
1 cup fresh shelled edamame
2 cups cooked soba noodles (about 4 oz. dry noodles)
1 tsp. crushed red pepper (optional)
2 Tbsp. raw peanuts
1. Combine broth, peanut butter, soy sauce, honey, garlic, and ginger in a medium bowl; whisk to blend. Set aside.
2. Heat oil in large skillet (or wok) over medium-high heat.
3. Add chicken and onion; cook, stirring frequently, for 4 to 6 minutes, or until onion is translucent.
4. Add spinach; cook, stirring frequently, for 2 to 3 minutes, or until spinach is wilted.
5. Add edamame, noodles, broth mixture, red pepper (if desired), and peanuts; cook, stirring frequently, for 2 to 3 minutes, or until heated through.

Wellness Wednesday - Amaranth

Amaranth is an especially high-quality source of plant protein including two essential amino acids, lysine and methionine. It’s a protein powerhouse.  It has 13-14% protein and has the highest and has some of the highest protein compared to other grains.  
Amaranth is full of iron and calcium and it has three times the amount of fiber content than wheat. Amaranth is also high in magnesium, phosphorus, and potassium.  It’s also the only grain known to contain Vitamin C. 
Amaranth is completely gluten-free and an extremely digestible grain. It is a great source of protein to those who are gluten sensitive and or have Celiac disease. Amaranth is an excellent source of lysine, an important amino acid (protein). The high lysine levels in amaranth sets it apart from other grains. It contains an excellent combination of essential amino acids and is easily absorbed into the intestinal tract. Amaranth seed or oil has been shown to help improve blood pressure, decrease cholesterol and improve cardiovascular disease.
Amaranth seeds can be used as a cereal or as a flour base. The leaves also are consumed as a nutritious leaf vegetable in cooking and salads. It is very easy to cook amaranth. Just measure grains and water, boil water, add grains, gently boil with the occasional stir for 15-20 minutes, then drain and rinse.

Are you Ambitious?

Ambition has been on my mind lately after the sermon series at my church.

And it got me thinking…I want you to stop & ask yourself these questions...

1. Do you have ambition?

2. Are you leveraging your ambition to serve Jesus and others?

3. Are you maturing, moving from me-centered to others-centered?

4. Where am I serving God and others?

5. Where can I leverage my ambition for Jesus?

6. How can I best serve?
God wired us to be ambitious!

Our ambition needs to be grounded in serving him and serving others.  Have you ever noticed that the happiest people truly give them of themselves on a daily basis and serve others? I know I want to be the happiest person!

There was a point in my life where I felt passionless and lost on what God's calling was from my life.  I had the desire to help and serve others but I wasn't sure how to do it.

It was then that Coaching presented itself to me. Never in my wildest dreams did I ever think that becoming a Health Coach would impact and change my life like it has done today.

God had the perfect plan for me and HIS plan was for to share my story with other women to help them overcome their struggles inside – out. There is nothing more rewarding than helping someone change their life. 

So today I want to encourage all of you to start living your life ambitiously. Figure out your passion and go for it!

Put your FEAR BEHIND you and TRUST BEFORE you!
