Foodie - Breakfast - Egg White Bites & Crockpot Oats

If you are anything like me I am waking up at the last second in the morning to get ready and take the kids to school!!! Rushing to get myself dressed, get the kids dressed, and make breakfast! One thing I have learned is that when you plan you have success. So if you want a healthy breakfast you need to plan for it! These are two meals that you can prep in advance and have ready to heat up in the morning! My kids also love the Egg Bites and the Oatmeal too! Oatmeal, eggs, and my shakeology are always on my list for top healthy breakfast choices:)
Egg White Bites
Yields 12 Egg Bites
2 regular cartons 100% pure liquid egg whites
Vegetables of your choice- Suggest spinach, multi-colored bell peppers, and onions
Seasoning Pepper, Garlic and/or Onion Powder
Cooking spray
Optional – salsa, cheese, avocado

1.       Spray muffin pan with olive oil spray
2.       Fill each muffin compartment with chopped vegetables
3.       Sprinkle with pepper, onion powder, and garlic powder
4.      Fill each compartment to the top with egg whites
5.       Bake at 350 for 20-25 minutes
Additional ways to eat:
1.        Put the Egg Bites in a English muffin for a breakfast sandwich
2.       Top with salsa or cheese or avocado

2 egg white muffins = 1 red, 1 green
2 egg white muffins + ½ of english muffin = 1 red, 1 green, 1 yellow
2 egg white muffins + cheese or avocado = 1 red, 1 green, 1 blue
Each egg white bite only has 10 CALORIES!

Crock Pot Steel Cuts
I use Red Bob Mill's Gluten Free Steel Cut oats and I usually add fruit, flaxseed, and or nuts!!!
